Crust:
1/2 C. light brown sugar
3 Tbsp. flour
1/2 C. chopped nuts (pecans preferred)
2 Tbsp. butter, melted

Mixture:
3 C. mashed sweet potatoes (about 6 medium sweet potatoes baked unti fork tender, then peeled and mashed)
1 C. sugar
1/2 tsp. salt
1 tsp. vanilla
2 large eggs, well-beaten
1/2 C. butter, cut into small cubes

Directions:
Directions:
Preheat oven to 350ºF.
Combine ingredients for crust in small bowl and set aside.
Combine mashed sweet potatoes, sugar, salt, vanilla, eggs, and butter in a large mixing bowl. Pour mixture into buttered baking dish.
Sprinkle sweet potato mixture with crust mixture. Bake for 30 minutes.
Remove from oven and allow to set for 30 minutes before serving.

This is a delicious sweet potato casserole. Even people who swear they don't like sweet potatoes, are surprised to discover that they like this casserole. This casserole is a wonderful accompaniment to the holiday turkey or ham.
