1 3/4 C. graham cracker crumbs
1/4 C. butter (melted)
1/4 C. sugar

24 oz. cream cheese - softened to room temperature
4 whole large eggs
1 C. sugar
2 tsp lemon juice

1 pt. sour cream
1/2 C. sugar
1 tsp vanilla

Directions:
Directions:
Combine graham crackers, butter and sugar. Press into 9" springform pan. Bake at 375ºF for 8 minutes.
Mix cream cheese, eggs, sugar and lemon juice until completely smooth. Pour into baked crust and bake at 350ºF for about an hour, until the center of the cake no longer appears shiny. Combine sour cream, sugar and vanilla. Pour over cheesecake and bake 5 minutes longer.
Cool completely on rack then refrigerate overnight or for at least 6 hours before serving.

This cheesecake has been a favorite for decades. It was in my original Kitchen Witch Cookbook from 1977! People often request this cheesecake when I am bringing the dessert, and it has been used on more than one occasion as a reward for various achievements.
