Zucchini Bars Recipe

2 c. brown sugar
4 eggs
1½ c. vegetable oil
3 c. grated zucchini
¾ c. nuts
3 c. flour
¾ tsp salt
2 tsp cinnamon
2 tsp baking soda

Frosting:
1-8oz cream cheese, softened
¾ stick of butter
1 TBSP milk
1 tsp vanilla
4 c. powdered sugar

Directions:
Directions:
Mix together sugar, eggs and oil. Add flour, salt cinnamon and soda; mix until combined. Stir in zucchini and nuts by hand. Bake in greased pan for 35-40 minutes at 350º. Let cool before frosting,

Beat cream cheese, butter, vanilla and milk until smooth, add powdered sugar. Spread on cooled cake.

If cake has a vegetable in it, it's healthy...right?!?! LOL. I remember one of the two summers we had a garden in a plot in Brandermill and we grew a huge crop of zucchini. We made every zucchini recipe we could think of, the sweet recipes were the most popular! Jackson and I enjoyed those afternoons in the garden however I remember you girls were not as interested in picking weeds and playing in the dirt.
