2 large onions
½ lb. mushrooms
¼ lb. butter
1 ¾ cups barley
1 qt. chicken stock

Start oven 350*. Chop onions coarsely and slice mushrooms thin, stems and all. Heat 2 Tablesps. Butter in large heavy skillet and cook mushrooms very gently for 5 minutes. Lift them out of skillet. Heat remaining butter in same skillet and cook onions until they look “wilted”. Now pour in the barley (This is an important step). Cook it ever so slowly turning it over frequently until it turns a beautiful brown. Add mushrooms to barley and pour on 1 ¾ cups chicken stock. Cover tightly bake 30 minutes, take off lid, taste for seasoning and pour in another 1¾ cups of stock. Bake 30 minutes longer. If barley looks dry, dribble on a little more stock. Bake 10-30 minutes longer.
