1 large frying chicken-salt
2 Tblsp. butter
2 ½ Tblsp. cornstarch
¾ cup chicken broth
1 cup burgundy
¼ teasp. thyme
Few drops bottled gravy coloring
8 small boiling onions
8 mushroom caps (fresh or canned)

Season chicken with salt. Brown slowly in butter. Remove chicken and place in baking dish. Blend cornstarch into butter remaining in skillet. Add broth, wine, ¾ salt, thyme and gravy coloring cook and stir until mixture boils and is thickened. Pour over chicken.

Cover and bake in 350* oven about 30 minutes until chicken is tender. Meanwhile boil onions in salted water to cover until tender; drain. Sauté fresh mushrooms in a small amount of butter. Add onions and mushrooms to chicken about 5 minutes before done.
