Arrange **3 cups sliced fresh peaches in greased 8 ½ - 9” round baking dish (deep). Mix 1 cup sugar, 1 teasp grated lemon peel, 1 tablesp. lemon juice, ¼ teasp. almond extract. Sprinkle over. Place in 400* oven-fix topping. Sift together 1 ½ cups sifted flour, 1 tablesp. sugar, 3 teasps baking powder, ½ teasp salt. Cut in 1/3 cup shortening. Beat 1 egg, combine with ½ cup milk. Add liquid all at once to flour mixture, then stir just until the flour is moistened. Remove peaches from oven, Spoon dough over the hot peaches, spreading it slightly with the back of spoon. Sprinkle with 2 tablesps sugar. Bake in hot oven (400*) 30 minutes, or until top is golden brown. Serve warm with a pitcher of cream, if you like. Serves 6. **about 4 large peaches.
