3 cups (360g) All-Purpose Flour
1 cup (198g) granulated sugar
2 teaspoons baking powder
3/4 teaspoon table salt
1/2 teaspoon nutmeg
16 tablespoons (227g) unsalted butter, cold, cut into pats or diced
3/4 to 1 cup (113g to 152g) currants or raisins
2 large eggs, beaten with enough milk to yield 3/4 cup liquid

1. Whisk together the flour, sugar, baking powder, salt, and nutmeg.
2. Work in the butter until the mixture is fairly evenly crumbly.
3. Mix in the currants/raisins.
4. Add the milk/egg mixture, mixing until everything is moistened.
5. Flour your work surface and roll out your dough to about 6-8mm thick.
6. Use a round biscuit cutter that's about 6cm in diameter and cut circles out of the dough.
7. Heat up a frying pan on a medium heat and grease with a little butter or oil. Add a few of the Welsh cakes and cook for about 3 minutes on each side. They should be golden on both sides once done.
8. Remove from the pan and sprinkle with sugar.
