¼ C. Oil
1 TBSP Lawrys Garlic Salt
2 Large Jalapeños - Seeded and Diced
1 Medium Onion - Diced
2 Cans Corn - Drained
1 8oz Cream Cheese
½ C. Colby Jack Cheese* - Shredded
½ Fresh Lime - Juiced*
Cotija Cheese

In a Large Skillet on low/med heat add Oil, Jalapeno and Onion. Cook until soft. Add Corn and Garlic Salt; Cover and cook for 5 minutes; Stir frequently. Add Cream Cheese; (Cover to melt cream cheese faster) Stir until well combined. Add Colby Jack, Sour Cream and Lime Juice; Stir until all is melted and well combined. Sprinkle a good layer of Cotija Cheese and Tajin across the top then mix well. Stir around skillet for about 2 minutes until well heated. Transfer to a bowl or small crockpot. Sprinkle Cotija Cheese and Tajin over the top and serve.

*Can use Pepperjack or Cheese of Preference
*Can Substitute 6 shakes of Bottled Lime Juice in place of Fresh
*If using a Crockpot DO NOT Preheat the Crockpot; Dip should stay warm for awhile without it turned on. Use Keep Warm or Low Setting for short periods and stir often so bottom does not burn.
