2 cans (15 oz) black beans - drained & rinsed
1 can (14.5 oz) diced tomatoes with mild chilis.
1 lb. boneless chicken breast
1 jar (8 oz) salsa
1 cup frozen corn
1 T. dried parsley
1/4 tsp pepper
1 tsp ground cumin *
3 cups hot cooked rice

Directions:
Directions:
Spray 2-3 quart crock pot with Pam or place in crockpot bag. Combine all ingredients except rice in crockpot, cover & cook on low 6-8 hours. Prepare the rice. Shred chicken and place back in crockpot. Serve over rice.
