1½ - 2 lbs. ground turkey or beef
1 can cream of mushroom soup
1 small can enchilada sauce
1 pkg taco seasoning
1 bag Fritos (I like to use the BBQ flavor)
Shredded cheddar cheese

Directions:
Directions:
Brown meat and drain grease. In a bowl mix meat, enchilada sauce, taco seasoning and soup. (Add some cayenne pepper for a spicier version.) Crush Fritos and layer ½ the bag on the bottom of a 9x13 dish. Spoon meat mixture on top of Fritos and then spread the remaining Fritos on top of the meat mixture. Cook at 350º for 20-30 minutes. Spread shredded cheese over the top and cook for another 5-10 minutes until the cheese is melted.

Super easy! Can even be cooked in the microwave for 10-15 minutes instead of in the oven.
