(The following amounts will only serve 2-3 people. I usually double it.)

2 Tbsp vegetable oil
1 medium onion, chopped
1 large clove garlic, minced ( I usually double)
1 Tbsp curry or Chana Masala powder (I usually use both, ½ Tbsp each)
1 Tbsp tomato paste
15 oz can of chick peas, drained (reserve 3 Tbsp liquid ~ I usually save a little more)
½ Tbsp lemon juice
½ tsp salt
Fresh black pepper
Crushed red pepper (to taste, optional)
1 Tbsp butter
Cilantro (optional)

Directions:
Heat oil on medium high heat. Fry onions until slightly browned. Reduce heat to medium and add garlic, curry, and tomato paste. Stir and simmer about 2 minutes. Add chick peas, liquid, lemon juice, salt, and black pepper. Simmer 5-6 minutes, stirring occasionally. Add red pepper to taste. Add butter, stirring through to melt it. Stir and simmer for 5 minutes more or until peas are softened and dish is hot. Serve over Basmati rice and top with cilantro.

I simmer with the lid on or it can get too dry. I like it a little more on the saucy side. (That’s why I save a little more of the liquid than the recipe calls for.) This is a super easy weekday dinner!
