3 cups 115ºF water
2¼ tsp active yeast
1 Tbsp sugar
750g (6 cups) flour
2 tsp salt

Directions:
Directions:
Mix water, sugar and yeast. Stir for 1 minute. Let proof for 10 minutes.
Add flour and salt. Mix until almost not sticky. Add ¼ cup flour if too sticky. Cover with plastic and let rise for at least 2 hours or up to 12 hours.
Put a pizza stone in the one and preheat to 450ºF.
Turn out on floured surface and cut and shape into 2 balls. Handle as little as possible.
Place the dough balls on a cookie sheet and score the tops with an "x".Place cookie sheet in oven on top of pizza stone. Bake for 30 minutes.

For an extra crispy crust, place a small oven proof bowl of water next to the baking bread for steam.
