About 2 lbs of red or gold potatoes, peeled and sliced into small wedges.
1 cup chicken stock
½ cup olive oil
⅓ lemon juice
4 cloves garlic finely grated
1 tbsp oregano
2 tsp salt

Place potatoes in roasting pan with all other ingredients. Toss well. Roast about 45 minutes in 400º, turning one or twice. Most of the liquid will be absorbed and mainly oil left. Transfer potatoes to separate tray. Scoop off some of the oil and drizzle over potatoes.
Roast about 30 minutes turning once or twice until golden brown. Plate and drizzle leftover garlic over. YUM!
