5 bacon slices
1 large onion, coarsely chopped
1 T dry mustard
1½ t dried thyme
¾ c ketchup
½ c apple cider vinegar
⅓ c dark molasses
⅓ c (or more) water
1 bay leaf, broken in half
1 15 oz can red kidney beans, rinsed, drained
1 15 oz can black beans, rinsed, drained
1 15 oz can canellini beans, rinsed, drained
1 t hot pepper sauce

STEP 1
Preheat oven to 350 degrees. Cook bacon until crisp. Crumble and reserve. Add onion to drippings in pot and saute until almost tender, about 5 minutes. Add dry mustard and thyme and stir 1 minute. Mix in ketchup, vinegar, molasses, ⅓ c water, bay leaf and all beans. Season with salt and pepper.
STEP 2
Cover pot and bake bean mixture 45 minutes, stirring occasionally and adding more water if mixture seems dry. Mix bacon into the beans. Bake 15 minutes longer. Discard bay leaf. Mix in hot pepper sauce and serve.

This recipe made its grand debut during a dutch pot cooking contest during a Boy Scout event. Daniel absolutely loved this one!!! Dad recalls another time when they purposely made 2 full pots and not one drop was left!! All of the boys ate every last bean.

This is a delicious entry or side dish that can accompany any bbq. It took dad a while to find a duplicate recipe that was even worthy of trying. He had to make it, then try it before giving his official thumbs up.
