1 lb Andouille or Cajun style sausage
4 boneless, skinless chicken breasts
2 Tbsp peanut oil (or vegetable oil)
1 cup chopped ham
2 tsp Cajun seasoning (Zatarans)
1 large onion, chopped
1 green pepper, chopped
½ cup celery, chopped (optional)
3 cloves minced garlic
1 (14.5 oz) can diced tomatoes
½ cup chicken broth
1 Tbsp Worcestershire sauce
2-3 drops hot sauce
3 cups cooked rice
1 cup finely chopped green onions (optional)

Directions:
Directions:
Cut sausage into ½ in slices, cut chicken into ½ in pieces. Cook sausage in oil in large pan over medium heat for 3 minutes or until browned. Add chicken and cook, stirring constantly, for 3 minutes or until browned. Stir in ham and cook until heated through. Stir in Cajun seasoning and next 5 ingredients, stirring constantly for 5 minutes. Stir in chicken broth and remaining ingredients, stirring constantly for 2 minutes or until thoroughly heated.
