500g/1lb cheese-filled tortellini or ravioli (fresh or dried)
100g/3.5oz walnuts, chopped
60g/2oz butter
100g/3.5oz pine nuts
2Tbsp chopped fresh parsley
2 tsp fresh thyme
salt and pepper
60g/2oz ricotta cheese
60g/2oz cream

Directions:
Directions:
Add the pasta to a large pot of rapidly boiling water and cook until just tender. Drain and return to the pot.

While pasta is cooking, heat butter in a heavy pan over medium heat until foaming. Add walnuts and pine nuts, and stir for 5min or until golden brown. Add the parsley, thyme, salt and pepper.

Beat the ricotta with the cream. Add the sauce to the pasta and toss well to combine. Serve immediately, topped with a dollop of ricotta cream.
