Crepes:

13 large eggs
2 cups of all purpose flour
1 cup of milk
1/2 cup of grated Romano cheese
1 large egg
salt, pepper and parsley to taste

Directions:

Batter:

1. In a mixer or a large bowl, mix, eggs and salt to well beaten

2. Add flour slowly until batter thickens to medium stiffness

3. Add milk (batter should be thick but not as thick as pancake batter)

4. Heat crepe pan on stove until hot and add a tab of butter (usually on first crepe only)

5. Pour crepe batter into pan 1/2 inch deep, then hold pan vertically to allow excess batter to drain back into container

6. Cooked the crepe until cooked through (watch your heat, you don't want them brown)

7. Repeat until all batter is used


Filling:

1. Place all ingredients in a large bowl and mix thoroughly

2. Stuff each crepe with a large spoonful of filling

3. Roll crepe and place on a sheet pan (tinfoil is the best no cleanup!)


Baking:

1. Bake stuffed crepes at 350 or until cheese is melted in crepes

2. Serve covered in your favorite tomato sauce

3. Optional to cover with Mozzarella and make it baked Manicotti
