In a liquid measuring cup:

1 T yeast
¼ c warm water
Add 1 tsp sugar, stir it, and let sit
(the sugar activates the yeast and the mixture will raise to the top of the liquid measuring cup)

In the Bosch or large mixing bowl mix together:
2 c scalded milk
½ c sugar
½ c shortening
2 tsp salt
Add 3 c flour to milk mixture. Beat 2 eggs with a fork and add eggs and yeast to flour
and milk mixture. Knead the dough and add flour as you go (about 7 ½ - 8 c) until you
get a soft ball. (Or in a Bosch, knead on speed “2” until the dough no longer sticks to the side of the bowl.)
Put in a greased bowl and turn dough over to grease both sides. Cover with saran wrap and let rise for 1 ½ - 2 hours. Once risen, punch and divide in half and cover with towel for 10 minutes. Roll out into 15” x 7”, ½” thick.

Cinnamon sugar:
¾ c sugar
1 ½ T cinnamon
Sprinkle on dough, spray water on it with a spray bottle. Roll up, seal the edges and put in bread pans. Let rise at least 1 hour. Brush tops with softened butter and sprinkle a little cinnamon/sugar mix on top. Bake at 375 for 35-40 minutes. You might need to
cover with foil the last 10 minutes to keep it from getting too brown on top.
