8 x 12 dish

1 puff pastry sheet (PC)
1 500g frozen spinach (drained)
1 onion chopped (small 1/2 large)
1 garlic chopped
1 tsp parsley
1 tsp dried basil
1 pack sliced jarlsberg cheese
5 eggs 1(separated yolk for brushing)
200 ml whole milk

Salt and Pepper

Directions:
Directions:
Start by frying your onion and garlic in some olive oil for a few minutes, add the spinach and herbs, fry until water has evaporated and leave to cool.

Add 4 eggs to a bowl and separate the last egg leaving the yolk on the side to brush the pastry and add the white with the other 4, whisk them with the milk and set aside.

Heat your oven to 350º and (grease dish first) line dish with parchment paper cut corners to fit better.

Add your pastry and brush it all around with egg yolk including the edges and fork some holes in the base.
Add the spinach mixture and spread, all the cheese slices and top with egg mix. Add the asparagus and salt and pepper and grated Parmesan.

Bake at 60-65 minutes on medium to low shelf. It may start to look puffy and golden after 30 minutes but hang in there as the pastry won’t be cooked properly.


Leave to cool 15 minutes before cutting. Eat hot or cold. Reheat in oven or air fryer.
