6 boneless chicken breasts
1 tbsp. oil
1 tbsp. minced garlic
3/4 cup diced onion
2 cups rice
1 1/2 cups chicken broth
1 cup salsa
1 ripe avocado, peeled and sliced
1 medium tomato, chopped
1/2 cup shredded cheddar cheese

Heat oil in a large skillet over medium to high heat. Brown chicken on both sides and remove. Saute garlic and onion. Add rice, chicken broth, and salsa. Mix well. Bring to a boil. Place chicken on top of rice, cover tightly, and decrease heat to medium-low. Simmer for 15 - 20 minutes. Garnish with tomato, avocado, and cheese.
