12 large fresh mushrooms
2 T. butter
1 medium onion, finely chopped
½ c. pepperoni diced
¼ c. finely chopped green pepper
1 small clove garlic, minced
½ c. or 12 crushed Ritz crackers
3 T. grated parmesan cheese
1 T. parsley, chopped
Salt, oregano and pepper to taste
⅓ c. chicken broth

Directions:
Directions:
Wash mushrooms and remove stems. Finely chop and reserve.
Drain caps. To butter add: onion, pepperoni, green pepper, garlic and chopped stems. Cook until tender.

Add to mixture: Crackers, cheese, parsley, salt, oregano and pepper. Stir in chicken broth.

Add stuffing to caps, rounding tops. Place caps in shallow baking pan with ¼-inch of water in pan.

Bake uncovered.
