1 pound steamed Cantonese egg noodles (long, flat white in the produce section)
4 T sesame oil
4 T peanut oil
4 T Dark soy sauce
3 T balsamic vinegar
2 T sugar
1 T plus ¼ t hot oil (red oil)
3 bunches scallions

Directions:
Directions:
clean and chop scallions
mix sugar and sesame oil in a metal bowl until sugar is dissolved.
Whisk in other liquid ingredients. set aside
Boil noodles 3 minutes in salt water. Drain well.
Add to metal bowel. Toss with other ingredients until coated.

Serve at room temperature.

Sprinkle extra scallions on top.
