12 large hardboiled eggs, peeled
½ cup mayonnaise
¼ cup cream cheese, softened
2-3 T pickled jalapenos, chopped
1 T pickled jalapeno juice
2 teaspoons Dijon mustard
1 teaspoon granulated sugar
¼ teaspoon black pepper
6 slices bacon, cooked, crispy and chopped.
fresh jalapenos thinly sliced for garnish (optional)
paprika for garnish

1. Cut the eggs in half lengthwise and add the yolks to a medium sized bowl. Mash the yolks with a fork until it forms crumbles.

2. Add the mayonnaise, cream cheese, pickled jalapenos, jalapeno juice, Dijon mustard, sugar, and black pepper to the bowl. Stir and mash until combined and smooth.

3. Add the bacon and stir it in. Taste and adjust the seasoning if necessary.

4. Add the filling back to the egg whites and fill them with a generous amount of filing. You will have some filling left over to spread on crackers.

5. Garnish with a fresh jalapeno slice and more crispy bacon, if desired. Sprinkle with paprika. Serve immediately or chill before serving.

I have always had a difficult time finding a method to hard boil eggs so that they peel easily. Here is what I found.

1. Bring the water to a boil. (enough to completely cover the eggs)
2. Use silicone tongs to place the eggs gently into the boiling water.
3. Boil the eggs exactly 15 minutes
4. Remove the eggs with the tongs and place them on a plate with paper towels.
5. Let the eggs sit for exactly 15 minutes
6. Crack the eggs open and peel.

Most of the eggs come out perfect. I still had a couple that were not so perfect. If you find something that works better, please share it with me!!
