¼ cup fresh lime juice (can use bottled)
¼ cup fresh, chopped cilantro
2 tbsp. olive oil
4 tsp. minced canned chipotle chili peppers (a.k.a. adobo)
1 tbsp. red wine vinegar
1 tsp. ground cumin
Two 16-oz. cans black beans, rinsed and drained
1½ cups frozen corn kernals, thawed
1½ cups red onion, chopped
1½ cups tomato, chopped (3 medium)
1 green pepper, chopped
1 large ripe avocado, diced

Directions:

Whisk first 6 ingredients in large bowl to blend.

Stir in beans, corn, onions, tomatoes, and green pepper.

Mix in avocado; season to taste with salt and pepper.

Refrigerate until serving.
