3/4 c. white whole-wheat flour, or whole-wheat pastry flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/8 tsp nutmeg
1/3 c. dark brown sugar
1 large egg
1 tsp vanilla extract
1 c. shredded carrots
1 1/2 c. rolled oats
1/4 c. raisins
1/4 c. cooking oil, mild-flavored, like canola or melted coconut oil

1. Use: Meal 1-2 hours before 1+ hour cardio or strength workout.

2. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or lightly grease with cooking oil.

3. In a medium bowl, whisk together flour, baking soda, cinnamon and nutmeg.

4. In a separate large bowl, mix together cooking oil, brown sugar, egg and vanilla until well combined. Fold in shredded carrots, flour mixture, oats and raisins and stir gently until just combined.

5. Using a 1 T. scoop, drop batter by the tablespoonful on prepared baking sheet. Bake for 8 - 10 minutes or until golden brown around the edges.

6. Cool bites for a few minutes on the baking sheet before transferring to a wire rack to finish cooking
