6 cups peeled and cubed zucchini
1/4 cup chopped onions
1 cup shredded carrots
1 cup sour cream
1 can cream of chicken soup
1 Tbsp. Oleo
1 package chicken stuffing mix
1/2 cup cubed processed cheese

Directions:
Directions:
Place cubed zucchini, carrots, and onions in boiling water and boil for 5 minutes. Drain. Mix together all other ingredients and fold in boiled vegetables. Place in well greased casserole dish and bake at 350 for 30 minutes.
