16 Oz Orzo
1 Tbs Olive Oil
2 Garlic Cloves, Minced
10 Oz Fresh Spinach
Black Olives
8 Oz Feta Cheese, Crumbled
4 Oz Sun Dried Tomatoes in oil, drained, cut into strips

Directions:
Directions:
Cook the orzo pasta, drain and place in a bowl. Heat a skillet over medium heat. Add olive oil & garlic & cook for 20 seconds. Add spinach and cook until wilted. Add spinach to the orzo. Add olives, feta cheese & sun-dried tomatoes. Toss and Serve

Variation: Chop the spinach but do not cook. Serve Orzo salad cold.
