2 cups sifted flour
¾ teaspoon baking powder
¾ teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
1 cup light brown sugar
½ cup sugar
¾ cup vegetable oil
1 teaspoon vanilla extract
2 eggs lightly beaten
2 ½ cups grated zucchini

Directions:
Directions:
In a large bowl whisk together the first 5 dry ingredients.
In a medium bowl whisk together the remaining ingredients except the zucchini.
After ingredients are mixed in separate bowls add in zucchini to the large bowl of dry ingredients and lightly toss till zucchini is coated.
Combine both bowls and mix until well combined
Pour into a bread pan and cook at 350º for about 45 minutes or till toothpick comes out clean. Let bread cool completely before slicing.
