½ cup cooked rice
2 tablespoons olive oil
1 chopped onion
2 tablespoons tomato paste
2 tablespoons minced garlic
1lb ground beef
1 can diced tomatoes
1 ½ teaspoon oregano
1 teaspoon salt
1 ½ teaspoon pepper
6 bell peppers tops and core removed
1 cup shredded cheese
1 tablespoon parsley

Directions:
Directions:
Make rice as directed on the box, in large skillet over medium heat, heat oil chopped onion tomato paste until onions are soft
Add in garlic and cook for about 1 minute till fragrant, add in ground beef and fully cook drain and return to pan.
Stir in rice, diced tomato, oregano, salt, and pepper let simmer for about 5 minutes
Place peppers in a baking dish and fill with beef mixture, top with cheese and cover with tin foil
Bake for about 35 minutes at 400º
uncover and continue to bake 10 more minutes until cheese is bubbly.
Garnish with parsley and serve.
