Whole Chicken 2-3 lbs
1 onion, quartered
1 carrot, cut into 2” pieces
1 stalk celery, cut into 2” pieces
1 bay leaf
2 cloves garlic, chopped coarsely
1/4 tsp dried thyme
Water to cover

2 carrots, peeled & chopped
2 stalks celery, trimmed & chopped
1 cup dried noodles
Salt & pepper to taste

Combine the first 8 ingredients to pot. Boil, then reduce heat to simmer. Then cover and cook for 1.5 hours, stirring occasionally. Remove chicken. Strain stock, reserve liquid. Skin fat from stock and return liquid to pot. Remove and discard chicken skin. Remove meat, and add to stock. Discard bones. Bring stock and chicken to a simmer. Add last 4 ingredients. Simmer until noodles and vegetables are tender. Enjoy.
