1/3 c. butter
1/3 c. four
1/3 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 3/4 c. chicken broth
2/3 c. milk
2 c. diced up chicken, pre-cooked
10 oz. frozen peas & carrots
2 pie crusts - premade crust in refrigerator section by biscuits. (One box has 2 pie crusts)

Spray pie pan. Lay one pie crust in pan, spread out.

Heat butter over low heat until melted and blend in flour, onion, salt, & pepper. Cook over low heat stirring until mixture is smooth and bubbly. Remove from heat and stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir a minute.

Stir in cooked chicken and frozen peas and carrots. Pour into pie crust and place second pie crust on top. Seal around the edges and slit top to allow air to flow. Bake at 425º for 30-35 minutes.
