3 1/4c. flour
2 tsp. salt
1/2 tsp active dry yeast
1 1/2c. warn water (hot to the touch but not boiling)

1 Dutch oven/heavy pot with lid that is oven safe.

1. Whisk flour, salt and yeast together in a large bowl until combined evenly.

2. Add the warm water and stir with the end of a spoon or spatula until the dough is shaggy and mixed together with no visible flour remaining.

3. Cover the bowl with parchment and wrap or a damp tea towel and let rise in a warm, draft free place overnight (12-18 hours is ideal, less and the bread will be more dense, however it can be left to rise up to 24 hours with still edible results).

4. Transfer the dough to a floured surface and fold the edges underneath to the center to form a loose ball. Place the ball, smooth side up onto a piece of parchment paper and cover.

5. Preheat oven with the Dutch oven and lid inside to 450ºF, when it has heated, pick up the parchment by the corners and put it inside the Dutch oven, replace the lid and bake covered for 30-40 minutes. Then, brush with milk, butter or egg white and bake uncovered for another 10-20 minutes until desired crust has been achieved.

6. Remove from the Dutch oven immediately and let cool on a rack.

Fresh bread in the morning is awesome... except when you're tired and don't have it in you to knead dough for ages in the evening (haha). Problem solved! This one is a no fail, the less you do with it, the better it turns out!
