2 Eggs, Beaten
1 Cup Sugar
1/2 Cup Vegetable Oil
1 Cup Zucchini, Grated
1 tsp Vanilla Extract
1-1/2 Cups Flour
1/2 tsp Salt
1/2 tsp Baking Soda
1/2 tsp Cinnamon
1/2 tsp Baking Powder
1/2 cup Walnuts, Chopped

Directions:
Directions:
Preheat oven to 350º.
Cream together the eggs & sugar in a mixing bowl.
Add vegetable oil, grated zucchini & vanilla extract. Mix well.
In a separate bowl, sift together flour, sale, baking soda, cinnamon & baking powder.
Slowly add the flour mixture to the wet ingredients and mix.
Fold in the walnuts.
Pour the mixture into a greased bread pan.
Bake for 1 hour.
