1 LB RICOTTA
1 1/2 CUPS SUGAR
BEAT TOGETHER AT HIGH SPEED

4 EGGS
2 1/2 TBSP LEMON JUICE
1 1/2 TBSP VANILLA
3 TBSP CORN STARCH
3 TBSP WHITE FLOUR
1 STICK MELTED BUTTER OR MARGERINE
16 OZ SOUR CREAM (FOLDED IN AT END)

GREASE SPRINGFORM PAN
HEAT OVEN TO 325º

BEAT ALL INGREDIENTS AT HIGH SPEED IN ORDER INDICATED ABOVE EXCEPT FOR SOUR CREAM, WHICH SHOULD BE FOLDED IN AT THE END.


BAKE IN 325* OVEN FOR 1 HOUR OR UNTIL FIRM. (DO NOT PEEK)
SHUT OFF OVEN AND LEAVE CAKE IN OVEN ANOTHER HOUR WITHOUT OPENING OVEN DOOR.
