2 cloves garlic minced (2 tsp)
2 tsp black pepper
1 lemon, zested and halved, divided
1 4lb whole chicken, patted dry
2 garlic heads, cut in half crosswise
4 Tbsp unsalted butter, melted
Fresh thyme leaves

Directions:
Preheat oven to 400ºF. Place salt, minced garlic, pepper and lemon zest in a small bowl and stir together. Place chicken in a large Dutch oven. Sprinkle salt mixture inside and out of chicken. Tie legs together with kitchen twine and tuck wings under bird. Nestle garlic head halves and lemon halves around chicken. Drizzle with melted butter over chicken.
Bake in preheated oven, uncovered, until golden brown and thermometer inserted in thickest part of chicken registers 165º, about 1 hour, 10 min to 1 hour 20 min. Remove pan from oven and let rest for 15 min. Sprinkle with thyme leaves.
Cut chicken into pieces as desired. Squeeze lemon halves over chicken.
