Ingredients: MEAT MIXTURE 1 lb. Lean ground beef 2 tablespoons butter 1 teaspoon salt ¼ teaspoon pepper ½ teaspoon cinnamon
MACARONI 1 lb. penne pasta or long Greek Pastitsio noodles (found at Greek store) 3 quarts water Dash of salt ¼ cup butter, melted
3 large eggs 1 cup grated Parmesan cheese or Pecorino Romano cheese
BÉCHAMEL SAUCE 8 tablespoons butter 8 tablespoons flour 4 cups warm milk 2 eggs, beaten ½ teaspoon nutmeg ½ cup grated Parmesan or Pecorino Romano cheese ¼ teaspoon pepper

Directions:In a large cast iron or other skillet, melt butter and add ground beef. Brown well and crumble. Add salt, pepper, cinnamon.
In a large Dutch oven, bring water to a rolling boil. Sprinkle with salt. Add pasta to boiling water and stir. Cook uncovered until tender, stirring occasionally. Drain, add butter and toss.
In a large bowl, beat eggs well, add to macaroni. Add cheese and toss well. Put in a greased 13x9 baking dish. Top with meat mixture.
BECHAMEL SAUCE In medium saucepan,melt butter, add flour. Blend until smooth. Gradually add milk, stirring constantly until thickened and smooth. Turn heat to low and stir in eggs. Cook over low heat until thickened. Add nutmeg,cheese and pepper. Spread sauce over macaroni, making sure to cover all over. Sprinkle top with nutmeg.
Bake at 350º for 30 minutes or until top is browned.
