Crust:
1 C sugar
3 C flour
1 tsp. baking powder
½ tsp. salt
¼ tsp. cinnamon
1 C unsalted butter, cold & cut in cubes
1 large egg, beaten

Peach Layer:
½ C sugar
1 Tbsp. corn starch
5 large peaches, peeled & diced (4-5 C)
1 tsp. lemon juice

(Optional) Icing:
1 C powdered sugar
¼ tsp. almond extract
1 Tbsp. milk

Directions:
Directions:
Preheat oven to 350º (for glass or dark metal pans), 375º ( for light metal pans). Lightly grease a 9 x 13 pan.

Crust: Whisk sugar, flour, baking powder, salt, & cinnamon together. Using a pastry cutter, blend in the butter until coarse. Add lightly beaten egg and mix. Press a little more than half of the dough in the pan.

Peach mixture: Whisk sugar, cornstarch, and cinnamon. Add diced peaches and toss to combine. Drizzle lemon juice over peaches, toss to coat. Pour peach mixture over crust.

Topping: Using your hands, press together handfuls of the remaining crumb topping. Scatter the clumps and remaining crumbs over the fruit, leaving some peaches showing.

Bake: 50-55 minutes (for glass pans), 40-45 minutes (for metal pans).
Cool completely then chill before cutting and icing.

Icing: Whisk powdered sugar, almond extract, and milk. Drizzle on bars just before serving.
