6 tbs Butter
2 cups Onions, chopped fine
1 cup Sour cream
3 tsp Ground cumin
3 cups Whipping cream
2 cup Monterey jack cheese, grated
1 cup Red or gr peppers, chopped
1 pkg Cream cheese
8 Chicken breasts, shredded
12-15 Tortillas, 6 ", either corn or flour
Salt and pepper, to taste

Directions:
In a crock pot brown onions and garlic until onions are clear and garlic is brown add peppers fry until brown on edges
Cook 5-7 minutes stir in oregano and cumin, cream cheese, stirring constantly for 3 minutes
In fry pan over medium heat sauté chicken in 2 tbs of butter (3 minutes) fold into onion mixture, mix well
Spray oil a 9" X 13" baking dish or pan, stack tortillas quarters, layer with half of the chicken mixture
Layer other half tortillas, top with the chicken
Cover with cheese
Cover the dish with foil Bake 350º for 20 minutes
Serve from pan/dish
