Ingredients: 6 scallions, cleaned and chopped 1 teas butter 1/2 pound crab or shrimp 1/4 cup Riesling wine 1/4 teas salt & pepper 1 pie shell 3 large eggs 1 1/4 cups light cream or half & half 5 ounces Swiss cheese, grated nutmeg to sprinkle on top

Directions:1) Preheat oven to 350 degrees. 2) Sauté scallions in butter, add seafood and wine and simmer until liquid is absorbed. 3) Bake crust for 5-8 minutes at 350 degrees before filling. 4) Sprinkle cheese evenly on bottom of pie shell, meanwhile whip eggs, cream, salt and pepper with wire whisk until well blended. 5) Put meat mixture on top of cheese then egg custard mixture. Sprinkle with nutmeg.
Bake 50-60 minutes or if using a glass pan 40-50 minutes. |

Notes: When we were living in Hawley, PA, I was an Elder and very involved with the First Presbyterian Church. To celebrate the church's 160th Anniversary in 2008 I headed up a committee putting together a cookbook with recipes from our Parishers, and this is one of those recipes. I would occasionally serve this Seafood Quiche at my Corner Tea House where many of the church members would come after Church services on Sunday mornings.
2024 Note: I have added this Quiche recipe in celebration of the Church's 175th Anniversary this year, and the Pastor who served while we were in Hawley, Reverend William Sanford, one of my first customers at the Tea House, along with his mother, and who performed our 50th Anniversary Vow Renewal Ceremony.
