Ingredients: 1 small smoked ham hock (could also use a package of thick cut bacon) 5 oz. fatback (really only need the 1 package of bacon listed above) 1 small yellow onion, diced 4 C. dried black-eyed peas 1/2 tsp white pepper

Directions: |
Directions:Bring a stockpot two-thirds full with water to a boil over medium-high heat. Add the ham hock, fatback, and onion and return to a rolling boil. Add the black-eyed peas and let cook, uncovered, for approximately 1 hour, or until the black-eyed peas are tender. Add salt and pepper if desired. Serve with a slotted spoon. |

Black-eyed peas are considered good luck on New Year's Day, a tradition supposedly dating back to the Civil War, when Union troops would strip the countryside of all stored food and destroy whatever they couldn't carry away Northerners didn't consider 'field peas' or field corn suitable to eat, and left those humble foods in the field.
