3 large eggs
1/2 C milk
1 large apple (I use more)
4 Tbs unsalted butter
3 Tbs sugar, divided
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
1/4 salt
1/2 C flour

Directions:
Place eggs & milk in med bowl and let come to room temperature, about 30 minutes

arrange rack in the middle of the oven and heat to 425

peel, core, then slice apples

melt butter in 10" cast iron skillet over med heat. add the apple, sprinkle with 2 Tbs sugar, cinnamon & nutmeg. Cook, stirring occasionally until apples are soft & lightly caramelized around the edges, about 5 min. Meanwhile prepare the batter.

Add 1 Tbs sugar, vanilla & salt to a bowl, add flour until smooth

remove skillet from heat & spread the apples into a single layer, Pour batter evenly over the apples.

Transfer skillet to oven & bake until set in the center & puffed around the edges 12-15 min. Serve dusted with powdered sugar or with maple syrup.

Pancake deflates quickly and is best eaten immediately after baking, but leftovers are great. Refrigerate leftovers in an airtight container for up to 3 days. Reheat in 300 oven until warmed through
