5 cups raspberries
2 cups white sugar
1 pkg Pectin
3 cups Water
Paraffin Wax

Directions:
Directions:

  • Put berries in a juicer and bring the water in the bottom of the juicer to a boil

  • Once you have sufficient juice transfer to a very large pan with a bail handle

  • Sprinkle in pectin and sugar and water and boil until thickness of jelly

  • Put in pint or half pint jars

  • Transfer to a canner and process for 30 minutes.

  • Seal the top with paraffin wax

  • Cool on a towel

  • Put on labels

  • Store on a shelf in the refrigerator

I liked canning. Some people feel it is a chore. I waited for blackberries, in the common area behind the house, to ripen before, bucket in hand, I would carefully make my way out to pick the berries. Those things have thorns! I have to admit picking the fruit is my least fun of canning! The actual canning, I find relaxing. Picking the fruit is tedious!
