French Onion Soup Recipe

4 or 5 large onions
2 tablespoons butter
1 tablespoon flour
1 ½ quarts (48 oz) beef broth
6 slices French bread, toasted
1 cup grated Swiss or Gruyère cheese

Directions:
Directions:
Peel onions, slice thinly and separate into rings. Sauté onion rings in foaming butter until brown and soft. Add flour and stir. Bring broth to simmer and add onions, salt and pepper. Continue simmering 30 minutes. May be prepared ahead to this point.

Ladle hot soup into bowls, with slice of bread in bowl, sprinkle with grated cheese. Place under broiler until cheese is melted. Serve immediately.
