2 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
1 bell pepper, diced
1 lb ground beef
1 (15oz) can black beans, rinsed and drained
1 tbsp taco seasoning
1 cup white rice, rinsed and drained
1 cud red salsa
1 ½ cup chicken or beef broth
½ cup shredded cheddar

Directions:

Preheat oven to 400ºF. Heat oil over medium heat. Add onion, pepper, and garlic. Cook, stirring often until softened, ~5 minutes. Add ground beef and cook until no pink remains. Add black beans, taco seasoning, rice, salsa, and chicken/beef broth and stir. Place in oven safe dish. Bake covered for 35-45 minutes until rice no longer hard and cooked through. Remove from oven, top with cheese, and place under broiler for 2-3 minutes until cheese is melted. Serve with sour cream, avocado, diced tomatoes, and parsley or green onions.
