4 c thinly sliced zucchini
1 c chopped onion
1/2 c margarine
1/2 c chopped parsley or 2 tbsp flakes
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/4 tsp basil leaves
2 eggs (beaten)
8 oz (2 c) shredded mozzarella
1 (8 oz) can crescent rolls
2 t dijon mustard

Directions:

Heat oven to 375º. In 10 in skillet cook zucchini & onion in butter until tender, about 10 mins. Stir in parsley & seasonings. In large bowl blend eggs & cheese, add zucchini mixture. Seperate cresent rolls into triangle and line ungreased 11' pie pan or 12x8 in baking dish. Press over bottom and sides to form crust. Spread mustard on crust. Pour zucchini mixture on top.

Bake for 18-20 mins or until knife is inserted and comes out clean & crust is golden brown.

*Freezes well
