1 1/2 lbs. ground round
1 cup chopped onion
1/2 (8 oz) package fresh mushrooms, sliced
1 garlic clove, minced
1 cup frozen peas
4 tsp beef bouillon
1/2 tsp salt
1/2 tsp dried thyme
1/2 tsp pepper
1 (14 1/2 oz) can stewed tomatoes
1 bay leaf
2 Tbsp red wine vinegar

Preheat oven to 400º.

Brown ground beef in a large, nonstick skillet over medium-high heat until meat is done. Remove ground beef from skillet using a slotted spoon; reserve 2 Tbsp of the drippings. Reduce heat to medium.

In the same pan, sauté onion and mushrooms until soft, adding garlic the last minute. Stir in beef, peas, and next 4 ingredients. Sprinkle flour over meat mixture. Increase heat to medium-high and cook 1 minute more, stirring constantly. Stir in tomatoes, bay leaf, and vinegar. Reduce heat to medium and cook 3 minutes until slightly thickened. Remove bay leaf. Transfer to a lightly greased casserole dish. Spoon mashed potatoes over meat.

Bake for 15 minutes.
