5 cups pared apples
¾ cup sugar - adjust to tartness of apples
2 tbsp minute tapioca
½ tsp cinnamon

Directions:
Cook over low heat, stirring until sugar is dissolved. Stir gently so as not to break fruit. Remove from heat 3 - 5 min after it begins to boil. Process in jars for 30 mins or pour into containers and freeze.
