1 stick butter, divided
1/2 cup (or more) finely chopped onion
3 large (28oz) cans whole plum tomatoes, drained & thickly sliced (reserve juice)
2 tsp sugar
1 tsp salt
cayenne pepper to taste (or tobasco)
black pepper to taste
4 cups + 1/2 cup fresh bread crumbs (French or similar)

preheat oven to 350º
grease 3 quart casserole
melt 6 tbsp butter in saucepan
sauté onions in butter til translucent
add tomatoes, sugar, salt, cayenne and black pepper to onion mixture
layer tomato mixture and bread crumbs in casserole (3 tomato, 2 bread: end & start with tomatoes)
pour a bit of remaining tomato juice over all layers (pretty juicy)
sauté remaining 2T butter and 1/2c breadcrumbs slightly
sprinkle on top
bake approximately 40 min, until brown on top and bubbly

This tomato and bread casserole comes from my Aunt Suzanne, whose family were restauranteurs. It makes a great side dish for holidays!
