2 lbs baby carrots
1/4 cup honey
3 garlic cloves (minced)
2 tbsp melted butter
1 tbsp olive oil
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp salt
1/4 tsp pepper
minced fresh parsley for garnish

Directions:
Directions:
Preheat oven to 425

Toss carrots with honey, garlic, butter, oil, and spices

Pour carrot mixture onto a sheet pan (I line mine with nonstick foil). Arrange into a single layer.

Roast for 20-25 minutes tossing halfway through
Can broil for 2-3 minutes to caramelize the edges

Transfer to dish and garnish with parsley. Serve
