3 lbs small red potatoes
1/4 cup good olive oil
1 1/2 tsp kosher salt
1 tp ground black pepper
2 tbsp dried minced garlic or 6 cloves fresh garlic
2 tbsp minced fresh parsley

Directions:
Directions:
Preheat oven to 400 degrees

Cut potatoes in half or quarters

In a large bowl mix the olive oil, salt, pepper, and garlic. Add the cut potatoes and toss until well coated.

Transfer potatoes to a sheet pan (I line the pan with nonstick foil)

Spread the potatoes into a single layer.

Roast for 45-60 minutes flipping the potatoes twice during baking. Cook until brown and crisp.

Remove the potatoes from the oven. Toss with parsley. Serve
